My dad recently had some major dental work done and spent a week of drinking only liquids. When the dentist finally said he could have some soft food, he said he really wanted some meatloaf. Now, I have several recipes for meatloaf, as I am sure you do also. But, I was telling my friend Wendy about my dad’s whole ordeal, and she said she had a good recipe for a very moist meatloaf. So, I gave it a try and invited my dad over for dinner. The meatloaf was a hit – with him, and with my family. So, here’s Wendy’s recipe for Cheddar Burger Meatloaf. I think it would be a good idea to double the recipe so that you can have yummy meatloaf sandwiches the next day with the leftovers. Try this for dinner tonight!
You will need:
1 ½ lbs. lean ground beef (I used ground chuck)
1 ½ cup shredded cheddar cheese
1 cup soft bread crumbs
1 slightly beaten egg
1/3 cup chopped onion
¼ cup Heinz 57 Sauce
¼ cup milk
½ tsp. salt
¼ tsp. pepper
Mix all the above ingredients together and form into a loaf.
Place loaf in a baking pan with a small amount of water on the bottom.
Bake at 350 F for approximately 1 hour, until cooked.
Serve and Enjoy! (I served mine with mash potatoes and French style green beans.)
