These cookies are brought to you courtesy of my friend and neighbor, April. These are really good – a nice buttery flavor and a little crunch from the Rice Krispies. Once you try them, you will agree that they are perfectly named. Yum Yum, you can’t have just one!
You will need:
½ cup Crisco
½ cup butter, softened
1 cup sugar
1 cup brown sugar
1 egg
1 cup oil
1 cup oatmeal
3 ½ cups flour
1 tsp. baking soda
1 tsp. vanilla
1 tsp. salt
1 cup of Rice Krispies
Mix all ingredients together, except the Rice Krispies – fold them in at the end.
Roll into balls and flatten slightly on an ungreased cookie sheet.
Bake at 325 F for 12 -15 minutes.
Note: This is an update to this post – Yum Yums taste best when you roll them in powdered sugar. Sorry I didn’t mention that earlier. Oops!
Note #2: If desired, you can also add ½ cup coconut, ½ cup nuts, ½ cup chocolate chips.
