If you are having a chocolate craving (like I was having this morning), these muffins will surely satisfy. They are moist, delicious, and of course, chocolate – very chocolate. We love these and are sure you will too. This recipe makes 24 muffins.
You will need:
2 cups flour
1 ¼ cups sugar
2 tsp. baking powder
½ tsp. salt
2/3 cup baking cocoa
1 cup whole milk ricotta cheese
2 eggs
1 and 1/3 cups milk
1 TBSP vanilla
½ stick butter (4 TBSP), melted
1 and 1/3 cups semisweet chocolate chips
Preheat oven to 350 F.
Spray muffins pans with non-stick vegetable spray or use paper liners.
In a large bowl, combine the flour, sugar, baking powder, salt, and cocoa powder. Set aside.
In a medium bowl, whisk together the ricotta and the eggs. Add the milk, vanilla, and melted butter, mixing well.
Pour the ricotta mixture into the flour mixture and stir until combined. Then, stir in the chocolate chips.
Fill prepared muffins tins with batter, ¾ full.
Bake for approximately 20 minutes, until toothpick inserted in center comes out clean.
Remove from oven and cool.
Serve and Enjoy!
