Here’s a yummy breakfast you can make for your family. It’s really good, really fast, and really easy to make. And, it’s yet another way for you to use some of your blueberries. The recipe below makes approximately 18 -20 pancakes.
You will need:
2 ½ cups flour
1 tsp. salt
2 TBSP baking powder
2 ½ teaspoons of sugar
2 eggs
2 cups milk
2 TBSP melted butter
1 cup fresh blueberries
In a large bowl, combine the dry ingredients. Add eggs and milk and mix thoroughly. Add the melted butter and mix until incorporated. Stir in the blueberries.
Heat a lightly buttered griddle or frying pan over medium heat. Pour pancake batter onto griddle and cook until lightly browned on both sides.
If desired, top with additional fresh blueberries.
Serve with butter and syrup. Enjoy!
