Nothing quite says summer like Watermelon. Not only is watermelon sweet, juicy, and thirst quenching, it is packed full of nutrition and is a great snack option. Watermelon has the highest concentration of Lycopene of any fresh fruit or vegetable. Lycopene is a powerful antioxidant that helps fight heart disease and cancer, especially prostate cancer. Watermelon also helps our bodies produce the amino acid Arginine, which helps lower blood pressure and improve insulin sensitivity.
Watermelons are an excellent source of several vitamins. They contain Vitamin A which is an antioxidant and also helps maintain eye health; Vitamin C which helps strengthen immunity; and Vitamin B6 which helps brain function and is necessary for energy production. Watermelon is also a good source of Thiamin, Potassium, and Magnesium.
There are many ways to enjoy this amazing fruit. Slices or chunks, alone or in a salad, frozen in a sorbet, or added to the heat of a jalapeno for a delicious salsa. You can also enjoy it as a refreshing smoothie (see my recent post under Food/Other).
No matter how you slice it, watermelon is not only good, it is good for you.
