Here’s a recipe for soft baked oatmeal cookies. They have such a good flavor and my family just loves them. We like them just as is, but you could separate the batter into batches and add some stir-ins like raisins, nuts, or dried cherries. You will get about 4 ½ dozen with this recipe. Yum!
INGREDIENTS:
2 cups flour
1 tsp. baking soda
1 tsp. salt
2 tsp. ground cinnamon
1 cup butter, softened
1 cup white sugar
1 cup brown sugar
2 eggs
1 tsp. vanilla extract
3 cups quick cooking oats
Preheat oven to 375 F.
In a medium bowl, combine flour, baking soda, salt, and cinnamon. Set aside.
In a large bowl, cream together the butter, white sugar, and brown sugar. Beat in the eggs. Stir in vanilla.
Stir the flour mixture into the creamed mixture.
Mix in oats.
Form the dough into balls, and place 2 inches apart on a non-stick baking sheet. (I use my baking stone to make my cookies.)
Bake for 8 -10 minutes. Enjoy!
Hi everyone. Today I gave my parents some of these cookies, and while they liked them, my mom thought they had a bit too much cinnamon.
Here’s the thing. My family really likes garlic and really likes cinnamon (not in the same recipe though) , so when I cook, I tend to go heavy on these spices. Anyway, I was thinking that maybe you should cut the cinnamon to 1 and 1/2 tsp. instead of 2 tsp. Just a suggestion.
