Here’s a quick potato dish my family loves. It is very easy and very cheesy. I made this as a side dish for our Mother’s Day Dinner. It looked very pretty on the table, and went well with the grilled steaks I served. I just topped mine with sliced green onion. If you wanted, you could also add crumbled bacon as a topping.
What you will need:
10 medium size red potatoes
1 stick butter
Seasoned Salt
8 oz. pkg. shredded Mexican style cheese
Green onion
Wash the potatoes, peel them, and then chop them into bite size pieces.
Place the chopped potatoes into a 9 x 13 baking pan sprayed with cooking spray.
Generously sprinkle seasoned salt all over the top of the potatoes.
Slice the stick of butter into pats and place the pats of butter all over the top of the potatoes.
Cover the pan with foil and bake at 350 F for about 1 hour and 15 minutes. Half way through cooking, stir the potatoes. Remove foil to see if potatoes are done; use a fork to see if they are soft enough and of course, sample one.
When the potatoes are done, remove the foil and discard it.
Sprinkle the cheese over the top of the potatoes.
Bake for an additional 10 minutes, or until the cheese is melted.
Remove from oven and sprinkle top with sliced green onions.
