I knew I would post this recipe in “Other”, but debated whether to post it in “Main Dishes”. I posted it in both places. I figure there has to be some families like ours that occasionally eat breakfast for dinner.
This recipe is for waffles and is really easy to make. They are delicious, and even better when you sprinkle them with powdered sugar. It is also nice to serve them with a side of fruit or a fruit topping. I love quick and easy breakfast recipes that you can prepare for your family to enjoy together.
I made some Easter morning and had a few left over, which I stored in the refrigerator. The next morning I just popped them in the toaster and they were just as good as the day I made them.
I have a Black & Decker Waffle Maker. It makes 4 square waffles at a time. With this recipe, I get 12 waffles, the thin type.
INGREDIENTS
2 cups flour
1 tsp. salt
4 tsp. baking powder
5 TBSP granulated sugar
2 eggs
1 ½ cups of warm milk
10 TBSP butter, melted
3 tsp. vanilla extract
In large bowl, combine flour, salt, baking powder and sugar and set aside.
In separate bowl, beat the eggs. Then, stir in the milk, butter, and vanilla.
Pour the milk mixture into the flour mixture and mix until blended.
Ladle the batter into a preheated waffle iron and cook until golden brown.
